Spaghetti with shrimp in a creamy tomato sauce

Shrimp, peeled
3 garlic cloves, pressed
dry oregano
½ cup sweet vermouth
14 oz. can diced tomatoes, drained
¾ cup heavy cream
½ tsp fresh lemon juice
½ lb. angel hair pasta

Cook the shrimp and garlic with salt, pepper, and oregano in olive oil. After 3-4
3-4 minutes add the tomatoes, vermouth and lemon juice and cook for about 8-
10 minutes before adding the cream. Stir constantly, and add the pasta when it
is ready.

Patience gives this a 9.5! The only reason it is not a 10 is because it is too early in the game. I agree. It was delicious! I have made a similar dish before but addition of the sweet vermouth really adds to the flavor of this sauce.

I used Hunt’s petite diced tomatoes and was not pleased…it made the sauce
Very loose, but fortunately did not effect the flavor.

Just between you and me….this was a TEN!
